
Classic Quiche Lorraine
Rich custard filled with bacon, Gruyère, and caramelized onions in a flaky crust

Quiche Lorraine is the queen of brunch — a buttery crust filled with rich custard of eggs, cream, crispy bacon, nutty Gruyère, and sweet caramelized onions.
The custard should be silky and just set — the ratio of eggs to cream creates a custard that trembles slightly when you cut into it.
Serve warm or at room temperature with a simple green salad.
Ingredients
- 1 9-inch pie crust
- 6 slices thick-cut bacon, chopped
- 1 medium onion, thinly sliced
- 4 large eggs
- 1 1/2 cups heavy cream
- 1 cup shredded Gruyère cheese
- 1/4 tsp nutmeg
- 1/2 tsp salt

Preheat oven to 375°F. Press pie crust into a dish. Prick bottom and blind bake 10 minutes.

Cook bacon until crispy. In the same pan, cook onion in bacon fat 10 minutes until caramelized.

Whisk eggs, cream, nutmeg, salt, and pepper.

Scatter bacon, onions, and Gruyère in the crust.

Pour custard over the filling. Bake 35-40 minutes until set around edges but jiggly in center.
