Red lentils cooked with tomatoes, carrots, and Italian herbs into a rich, meaty Bolognese. Completely vegan.

Ingredients

  • 1.5 cups red lentils
  • 1 can crushed tomatoes
  • 2 carrots, diced
  • 2 tbsp tomato paste
  • 1 lb spaghetti

Instructions

    Sauté onion, carrots, celery. Add tomato paste.

    Add lentils, tomatoes, and water. Simmer 20-25 minutes until thick.
