
Chewy Peanut Butter Cookies

These peanut butter cookies are impossibly chewy with crackly, sugary tops and a deep, nutty flavor. And they require only 5 pantry ingredients.
The natural oils in peanut butter replace the need for flour or butter in this recipe. The result is intensely peanutty, naturally gluten-free cookies.
Underbake slightly for ultra-chewy centers.
Ingredients
- 1 cup peanut butter (creamy or crunchy)
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda

Preheat oven to 350°F. Line baking sheets with parchment paper.

Mix peanut butter, sugar, egg, vanilla, and baking soda until smooth.

Roll into 1-inch balls. Place on baking sheet and press with a fork to make crosshatch marks.

Bake 9-10 minutes until edges are set but centers look slightly underdone.
