Chocolate lava cake is the ultimate restaurant dessert — cut into the individual cake and warm, glossy chocolate flows out like lava.

The trick is timing — the edges need to be set while the center remains liquid. Every oven is different, so watch carefully the first time.

Use the best chocolate you can find. This dessert has so few ingredients that quality matters enormously.

Ingredients

  • 6 oz dark chocolate (60-70% cacao)
  • 1/2 cup butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/4 tsp salt

Instructions

  1. 1

Melt chocolate and butter together. Let cool slightly.

  2. 2

Whisk eggs, yolks, and sugar until thick and pale.

  3. 3

Fold chocolate mixture into eggs. Sift in flour and salt. Fold gently.

  4. 4

Divide among 4 greased and floured ramekins.

  5. 5

Bake at 425°F for 12-14 minutes until edges are firm but center is soft.

  6. 6

Let rest 1 minute. Run a knife around the edge, invert onto plates. Serve immediately with ice cream.
