
Classic Chicken Pot Pie

Chicken pot pie is a hug in a dish — a golden, flaky crust hiding a creamy filling loaded with tender chicken, sweet peas, carrots, and pearl onions.
The filling is a simple white sauce (butter, flour, broth, cream) with rotisserie chicken and frozen vegetables.
Use store-bought puff pastry for an extra-flaky top without the work.
Ingredients
- 3 cups cooked chicken, shredded
- 1 cup frozen peas and carrots
- 1/2 cup frozen pearl onions
- 1/3 cup butter
- 1/3 cup flour
- 1 3/4 cups chicken broth
- 2/3 cup heavy cream
- 1 sheet puff pastry, thawed
- 1 large egg (for egg wash)
- 1 tsp salt

Melt butter, add flour, cook 1 minute. Slowly whisk in broth and cream. Simmer until thick.

Stir in chicken, peas, carrots, pearl onions, salt, and pepper.

Pour filling into a 9-inch deep dish pie plate or baking dish.

Drape puff pastry over the top. Trim and crimp edges. Cut vents. Brush with egg wash.
