These classic French crêpes are impossibly thin, delicate, and have those gorgeous lacey golden edges that mark a perfectly cooked crêpe. The batter is simple — just flour, eggs, milk, butter, and a pinch of salt — but the technique makes all the difference.

The key is a thin, smooth batter that's been rested for at least 30 minutes (or overnight in the fridge). This rest allows the flour to fully hydrate and the gluten to relax, producing crêpes that are tender rather than rubbery.

Fill them sweet with Nutella and banana, fresh berries and whipped cream, or lemon and sugar. Go savory with ham and gruyère, smoked salmon and crème fraîche, or mushrooms and Swiss. This is one recipe that serves as breakfast, lunch, dinner, or dessert.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups whole milk
  • 2 tbsp unsalted butter, melted, plus more for the pan
  • 1 tbsp granulated sugar (for sweet crêpes)
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract (optional)

Instructions

    Blend flour, eggs, milk, melted butter, sugar, salt, and vanilla in a blender until completely smooth, about 30 seconds. Alternatively, whisk vigorously in a bowl until no lumps remain.

    Refrigerate the batter for at least 30 minutes (up to overnight). The batter should be the consistency of heavy cream.

    Heat an 8-10 inch nonstick pan or crêpe pan over medium heat. Brush with a thin layer of melted butter.

    Pour about 3 tablespoons of batter into the center of the pan. Immediately tilt and swirl the pan to spread the batter into a thin, even circle.

    Cook for about 1 minute until the edges start to turn golden and lift away from the pan. Use a thin spatula to gently flip.

    Cook the second side for 30 seconds. Slide onto a plate. Repeat with remaining batter, stacking crêpes as you go.
