
Creamy Poutine
Crispy fries smothered in rich gravy and squeaky cheese curds

Poutine is Canada's gift to the world — the holy trinity of crispy fries, rich gravy, and squeaky white cheese curds that melt just slightly in the heat.
The gravy must be hot enough to partially melt the curds while keeping them squeaky. The fries should be extra crispy since the gravy will soften them.
Use real cheese curds — shredded mozzarella is not the same.
Ingredients
- 2 lbs russet potatoes, cut into fries
- 2 cups cheese curds
- 2 cups beef broth
- 2 tbsp butter
- 2 tbsp flour
- 1 tbsp Worcestershire sauce
- 1/2 tsp black pepper
- oil for frying
Instructions

Soak cut fries in cold water 30 minutes. Drain and dry thoroughly.

Fry at 325°F for 5 minutes (blanch). Remove. Increase to 375°F and fry again until golden and crispy.

Make gravy: melt butter, whisk in flour. Cook 2 minutes. Add broth and Worcestershire. Simmer until thick.

Pile hot fries on plates. Scatter cheese curds over the top.

Ladle hot gravy over everything. Serve immediately.
