
Loaded Sweet Potato Nachos

Sweet potato nachos swap tortilla chips for crispy roasted sweet potato rounds — a healthier base that's just as craveable when loaded with all the fixings.
Slice the sweet potatoes thin and roast until crispy on the edges. Load with black beans, cheese, and broil until bubbly.
Top with avocado, sour cream, jalapeños, and cilantro.
Ingredients
- 2 large sweet potatoes, sliced into thin rounds
- 1 can black beans, drained
- 1 1/2 cups shredded Mexican cheese
- 1 large avocado, diced
- 1/4 cup sour cream
- 1/4 cup pickled jalapeños
- 2 tbsp olive oil
- 2 tbsp cilantro, chopped
