Crispy hash browns with a golden, shattering crust and tender shredded potato interior. The secret is squeezing every last drop of moisture from the shredded potatoes. Wet potatoes steam instead of frying.

Wring them in a clean kitchen towel until bone-dry, then press firmly into the hot, buttered skillet without disturbing.

Let them cook undisturbed for 5 minutes to develop that gorgeous golden crust.

Ingredients

  • 2 large russet potatoes, peeled and shredded
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  1. 1

Shred potatoes on a box grater. Squeeze out moisture in a clean kitchen towel.

  2. 2

Toss dried potatoes with salt, pepper, and garlic powder.

  3. 3

Heat butter and oil in a large nonstick skillet over medium-high heat.

  4. 4

Spread potatoes in an even layer, press firmly. Cook without moving 5-6 minutes until deeply golden.

  5. 5

Flip in sections. Press down and cook another 4-5 minutes. Serve immediately.
