Homemade granola is one of those recipes that seems too simple to be this good — oats, nuts, honey, and oil baked until golden and crunchy with big, satisfying clusters.

The secret to clusters is pressing the mixture firmly onto the baking sheet and not stirring during baking. Only break it into chunks after it has cooled completely.

Store in an airtight container for up to 3 weeks.

Ingredients

  • 3 cups old-fashioned oats
  • 1 cup mixed nuts, roughly chopped
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup dried fruit (added after baking)

Instructions

    Preheat oven to 325°F. Line a baking sheet with parchment paper.

    Toss oats, nuts, cinnamon, and salt. Drizzle with honey, oil, and vanilla. Mix until coated.

    Spread onto the baking sheet and press firmly into an even, compact layer.

    Bake 25-30 minutes until golden. Do NOT stir — this is how you get clusters.

    Cool completely on the pan. Break into chunks. Toss with dried fruit.
