French dip sandwiches are simple perfection — thin-sliced roast beef piled on a crusty hoagie roll with melted provolone, dunked into a rich, beefy au jus.

The au jus is key — beef broth, Worcestershire, garlic, and thyme reduced to concentrated flavor.

Use deli roast beef or leftover pot roast.

Ingredients

  • 1 lb thinly sliced deli roast beef
  • 4 whole hoagie rolls, split
  • 4 slices provolone cheese
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, smashed
  • 1 sprig fresh thyme
  • 1 tbsp butter

    Simmer broth, Worcestershire, garlic, thyme, and butter for 10 minutes for the au jus.
