All the best parts of a loaded baked potato — in soup form. Creamy, thick, and topped with crispy bacon, sharp cheddar, sour cream, and chives.

Blend only half the soup for a chowder-like texture with chunks of potato.

Ingredients

  • 5 large russet potatoes, peeled and cubed
  • 6 slices bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 tbsp chopped chives

Instructions

    Cook bacon until crispy. Crumble and set aside. Reserve 2 tbsp drippings.

    Sauté onion and garlic in bacon drippings. Add potatoes and broth. Simmer 20 minutes until tender.

    Mash or blend half the soup for thickness.

    Stir in cream and sour cream. Heat through.
