These loaded breakfast burritos are a complete morning meal wrapped in a warm flour tortilla — fluffy scrambled eggs, crispy hash brown potatoes, melty cheese, savory sausage, and a drizzle of hot sauce.

The key is cooking each component separately so nothing gets soggy. Crisp the potatoes first, brown the sausage, then scramble the eggs gently.

Wrap individually in foil, freeze for up to 3 months, and microwave for 2-3 minutes for a grab-and-go breakfast.

Ingredients

  • 4 large flour tortillas (burrito-size)
  • 6 large eggs, beaten
  • 1 cup frozen hash browns
  • 1/2 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 2 tbsp butter
  • 1/2 tsp salt
