
Pavlova with Fresh Berries
Crispy-shelled meringue with a marshmallow center and whipped cream

Pavlova is a cloud of meringue — crispy on the outside, marshmallowy soft on the inside — topped with whipped cream and jewel-toned fresh berries.
The vinegar and cornstarch are what create that signature contrast between the shatteringly crisp shell and the chewy, marshmallowy center.
Assemble just before serving so the meringue stays crispy.
Ingredients
- 4 large egg whites, room temperature
- 1 cup superfine sugar
- 1 tsp white vinegar
- 2 tsp cornstarch
- 1 tsp vanilla extract
- 1 1/2 cups heavy whipping cream
- 2 cups mixed fresh berries
- 2 tbsp powdered sugar
Instructions

Preheat oven to 250°F. Line a baking sheet with parchment.

Beat egg whites until soft peaks. Gradually add sugar, beating until stiff and glossy.

Fold in vinegar, cornstarch, and vanilla.

Shape into a large circle on parchment, slightly lower in the center.

Bake 75 minutes, then turn off oven and leave meringue inside until completely cool.

Top with whipped cream and fresh berries just before serving.
