Perfect French toast is a study in contrasts — a golden, slightly crispy exterior gives way to a soft, custardy interior that's rich with vanilla and warm cinnamon. It's the breakfast that feels like an event but takes less time than waiting for a table at a restaurant.
The custard is the foundation: eggs, milk, cream, vanilla, and cinnamon whisked into a rich bath that the bread soaks up like a sponge. The bread matters — use thick-cut brioche, challah, or Texas toast. Thin sandwich bread will fall apart; you need something sturdy that can absorb the custard without getting soggy.
Cook in a buttered pan over medium heat — not too hot or the outside burns before the inside sets. The goal is a deep golden crust with a fully cooked, pudding-like center. Top with maple syrup, powdered sugar, and fresh berries.
Ingredients
- 8 thick slices brioche or challah bread (3/4-inch thick)
- 4 large eggs
- 1/2 cup whole milk
- 1/4 cup heavy cream
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 2 tbsp granulated sugar
- 1/4 tsp salt
- 3 tbsp unsalted butter for cooking
- 1 dusting powdered sugar for serving

Whisk eggs, milk, cream, vanilla, cinnamon, sugar, and salt in a wide shallow dish until completely smooth.

Heat a large nonstick pan or griddle over medium heat. Add a tablespoon of butter and let it melt and foam.

Dip each bread slice in the custard for 15-20 seconds per side — long enough to soak but not so long the bread falls apart.

Place the soaked bread in the buttered pan. Cook for 2-3 minutes per side until golden brown and cooked through.
