Chicken and dumplings is Southern comfort at its finest — a thick, creamy chicken stew topped with pillowy drop dumplings that steam on top.

The dumplings are dead simple: flour, baking powder, milk, butter. Drop spoonfuls onto the simmering stew, cover, and don't peek for 15 minutes.

Use rotisserie chicken for a shortcut that gets dinner on the table faster.

Ingredients

  • 3 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 1/3 cup butter
  • 1/3 cup flour
  • 1 cup heavy cream
  • 2 cups flour (dumplings)
  • 1 tbsp baking powder (dumplings)
  • 3/4 cup milk (dumplings)
  • 2 tbsp melted butter (dumplings)

Instructions

  1. 1

Sauté carrots, celery, and onion in butter 5 minutes. Add flour, cook 1 minute.

  2. 2

Add broth and cream. Bring to a simmer. Add chicken.

  3. 3

For dumplings: mix flour, baking powder, salt. Stir in milk and butter until just combined.

  4. 4

Drop spoonfuls of dumpling dough on top of the simmering stew.

  5. 5

Cover tightly. Simmer 15 minutes without lifting the lid.

  6. 6

Dumplings are done when fluffy and cooked through. Serve immediately.
