Pin This RecipeThis pumpkin pie is silky, deeply spiced, and set in a flaky crust. The filling is custard-smooth with a warm blend of cinnamon, ginger, nutmeg, and cloves.
The trick is baking until the center still jiggles slightly — it sets as it cools.
Serve with a mountain of freshly whipped cream.
Ingredients
- 1 9-inch pie crust
- 1 can (15 oz) pure pumpkin purée
- 3/4 cup granulated sugar
- 2 large eggs
- 1 can (12 oz) evaporated milk
- 1 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/2 tsp salt
Instructions
- 1
Preheat oven to 425°F. Press pie crust into a 9-inch pie dish.
- 2
Whisk pumpkin, sugar, eggs, evaporated milk, and all spices until smooth.
- 3
Pour into crust. Bake at 425°F for 15 minutes.
- 4
Reduce to 350°F and bake 40-45 more minutes until edges are set but center jiggles.
- 5
Cool completely at room temperature. Refrigerate at least 4 hours before serving.
