
Tres Leches Cake
Sponge cake soaked in three milks and topped with whipped cream clouds

Tres leches cake is a magic trick — a light sponge cake absorbs a mixture of three milks (condensed, evaporated, and heavy cream) to become impossibly moist without being soggy.
The sponge is airy enough to absorb the milk mixture like a sponge. Don't skip the chilling time — overnight lets every bit absorb.
Top with sweetened whipped cream and cinnamon.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 5 large eggs, separated
- 1/3 cup whole milk
- 1 tsp vanilla extract
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1/2 cup heavy cream
- 2 cups heavy whipping cream (for topping)
- 3 tbsp powdered sugar
- 1/2 tsp cinnamon

Beat egg whites to stiff peaks. In another bowl, beat yolks with sugar. Fold together. Add flour, milk, and vanilla.

Pour into a greased 9x13 pan. Bake at 350°F for 25 minutes.

Let cool completely. Poke holes all over with a fork.

Whisk together condensed milk, evaporated milk, and cream. Pour slowly over the cake.

Refrigerate at least 4 hours (overnight is best).

Whip cream with powdered sugar. Spread over cake and dust with cinnamon.
