Waxy potatoes dressed warm with a tangy vinaigrette of beef broth, mustard, vinegar, and onions. Mayo-free, Southern German style.

Ingredients

  • 2 lb waxy potatoes
  • 1 onion, finely diced
  • 1/2 cup warm beef broth
  • 3 tbsp white wine vinegar
  • 2 tsp German mustard
  • 3 tbsp oil

Instructions

    Boil potatoes in skin. Peel and slice while warm.

    Mix warm broth, vinegar, mustard, oil, and onion. Pour over warm potatoes.

    Gently fold. Let stand 20 minutes to absorb. Garnish with chives.
