Berliner Pfannkuchen — German Jelly Donuts

Fluffy, deep-fried doughnuts filled with strawberry jam and dusted with powdered sugar. Traditional for Karneval and New Year's Eve.

Ingredients

  • 4 cups flour
  • 1 packet yeast
  • 0.75 cup warm milk
  • 0.25 cup sugar
  • 3 egg yolks
  • 3 tbsp butter, softened
  • 1 cup strawberry jam
  • oil for frying, powdered sugar

Instructions

    Make dough: combine flour, yeast, milk, sugar, egg yolks, and butter. Knead until smooth. Rise 1.5 hours.

    Roll out to 1.5cm thickness. Cut 8cm rounds. Let rise on a floured tray for 30 minutes.

    Deep fry in 170°C oil, 2-3 minutes per side with lid on (for the white ring).

    Fill with jam using a piping bag and long nozzle. Dust with powdered sugar.
