Moist, spiced carrot cake layered with tangy cream cheese frosting and topped with walnuts.

Ingredients

  • 300 g grated carrots
  • 250 g flour
  • 200 g sugar
  • 200 ml vegetable oil
  • 3 eggs
  • 2 tsp cinnamon
  • 200 g cream cheese (frosting)
  • 100 g walnuts

Instructions

    Mix flour, sugar, cinnamon. Whisk eggs and oil, combine.

    Fold in grated carrots and walnuts.

    Bake in two 20cm round pans at 175°C for 30-35 min.

    Cool completely. Frost with cream cheese frosting between layers and on top.
