The meatloaf with a hidden egg surprise

Germany's most beloved meatloaf — a seasoned mix of beef and pork shaped around hard-boiled eggs hidden inside, so every slice reveals a perfect egg center. The name 'Falscher Hase' (False Hare) comes from post-war times when families couldn't afford rabbit, so they shaped meatloaf to look like one.
Ingredients
- 2 lb ground beef and pork mix
- 1 onion, finely diced
- 2 bread rolls, soaked in milk
- 1 egg
- 4 hard-boiled eggs
- 2 tbsp mustard
- 1 cup beef broth
- salt, pepper, marjoram
Instructions

Mix ground meat, diced onion, squeezed bread rolls, raw egg, mustard, and seasonings thoroughly.

Shape half the mixture into a loaf on a baking sheet. Place hard-boiled eggs in a line down the center. Cover with remaining meat and shape into a loaf.

Pour broth into the pan. Bake at 180°C for 60-70 minutes, basting occasionally.

Slice to reveal the egg centers. Serve with mashed potatoes and the pan gravy.
