The traditional German Christmas dinner — roast goose legs with crispy skin, served with Rotkohl and Kartoffelknödel.

Ingredients

  • 4 goose legs
  • 2 tsp salt
  • 1 tsp dried mugwort (Beifuß)
  • 1 apple, quartered
  • 1 onion, quartered
  • 1 cup water

Instructions

    Rub goose legs with salt and mugwort. Let rest overnight in the fridge.

    Place on a rack over a roasting pan with apple, onion, and water.

    Roast at 180°C for 2 hours, basting occasionally.

    Increase to 220°C for 15 minutes to crisp the skin.
