Authentic Bavarian lye pretzels with a dark, shiny crust and soft, chewy interior.

Ingredients

  • 4 cups bread flour
  • 1 packet active dry yeast
  • 1.25 cups warm water
  • 2 tbsp butter, melted
  • 1/3 cup baking soda (for dipping)

Instructions

    Mix flour, yeast, water, and butter. Knead 8 minutes. Rise 1 hour.

    Divide into 8 pieces. Roll into ropes and twist into pretzel shape.

    Dip in baking soda water 30 seconds. Sprinkle with coarse salt.
