
Käsespätzle with Crispy Onions

Swabian comfort food at its finest — hand-scraped egg noodles layered with melted Emmental and Gruyère cheese, crowned with deeply caramelized crispy onions. This Southern German classic is the answer to American mac and cheese, but with a nutty alpine cheese pull that stretches for days.
Ingredients
- 3 cups all-purpose flour
- 4 large eggs
- 1/2 cup water
- 2 cups shredded Emmental cheese
- 1 cup shredded Gruyère cheese
- 3 large onions, thinly sliced
- 3 tbsp butter
- salt, pepper, and nutmeg

Mix flour, eggs, water, and a pinch of salt into a thick, sticky batter. Let rest 15 minutes.

Bring a large pot of salted water to a boil. Press batter through a Spätzle press or scrape from a board into the water. Cook until they float, about 2 minutes.

Meanwhile, melt butter in a skillet. Add sliced onions and cook over medium heat for 20-25 minutes until deeply golden and crispy.

Layer drained Spätzle with mixed cheeses in a baking dish. Bake at 200°C for 10 minutes until bubbly.
