A hearty, creamy German potato soup loaded with leeks, carrots, and crispy bacon bits. The ultimate comfort food for cold days.

Ingredients

  • 2 lbs potatoes, peeled and diced
  • 2 leeks, sliced
  • 2 carrots, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 slices bacon, diced
  • 1 tbsp butter
  • salt, pepper, nutmeg to taste

Instructions

    Fry bacon until crispy. Set aside. In the same pot, melt butter and sauté leeks and carrots for 5 minutes.

    Add potatoes and broth. Bring to a boil, then simmer for 20 minutes until potatoes are tender.

    Partially blend with an immersion blender (leave some chunks).
