German Potato Soup (Kartoffelsuppe)

Ingredients
- 2 lbs potatoes, peeled and diced
- 2 leeks, sliced
- 2 carrots, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 slices bacon, diced
- 1 tbsp butter
- salt, pepper, nutmeg to taste
Instructions

Fry bacon until crispy. Set aside. In the same pot, melt butter and sauté leeks and carrots for 5 minutes.

Add potatoes and broth. Bring to a boil, then simmer for 20 minutes until potatoes are tender.

Partially blend with an immersion blender (leave some chunks).

Stir in cream, season with salt, pepper, and nutmeg.
