Large Swabian pasta pockets filled with a savory mix of meat, spinach, and onions. Served in broth or pan-fried with onions.

Ingredients

  • 3 cups flour
  • 3 eggs
  • 0.5 lb ground pork
  • 0.5 lb ground beef
  • 1 cup cooked spinach, chopped
  • 1 onion, diced
  • 2 day-old bread rolls, soaked

Instructions

    Make pasta dough: flour, eggs, water. Knead until smooth. Rest 30 minutes.

    Make filling: mix ground meats, spinach, onion, soaked bread, salt, pepper, and nutmeg.

    Roll dough thin. Place spoonfuls of filling at intervals. Fold and seal edges.
