- 1.5 cups long grain rice
- 2 cups chicken broth
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp thyme
- 2 tbsp olive oil
- Salt and pepper to taste

Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken skin-side down 4-5 minutes until golden. Flip and sear 2 more minutes. Remove and set aside.
