Wide rice noodles stir-fried with Chinese broccoli, egg, and a sweet soy glaze — Thailand's smoky street food classic.

Ingredients

  • 300 g wide rice noodles
  • 200 g Chinese broccoli or regular broccoli
  • 200 g chicken or tofu, sliced
  • 2 eggs
  • 3 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar

Instructions

    Soak wide noodles until pliable (or use fresh). Mix soy, oyster sauce, sugar.

    Stir-fry protein over high heat until done. Remove.

    Scramble eggs in the wok, add broccoli, stir-fry 2 min.

    Add noodles and sauce, toss vigorously to char slightly. Return protein. Serve.
