Thailand's iconic stir-fried rice noodles with shrimp, peanuts, bean sprouts, and a sweet-tangy tamarind sauce.

Ingredients

  • 200 g rice noodles
  • 200 g shrimp, peeled
  • 2 eggs
  • 100 g bean sprouts
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 50 g roasted peanuts, crushed

Instructions

    Soak rice noodles in warm water 20 minutes. Drain.

    Mix tamarind, fish sauce, and sugar for the sauce.

    Stir-fry shrimp, push aside, scramble eggs. Add noodles and sauce.

    Toss with bean sprouts, top with peanuts and lime wedges.
