Rouladen — German Beef Rolls

Thin beef slices rolled around mustard, onion, pickles, and bacon, then braised in rich gravy. A Sunday dinner classic in Germany.

Ingredients

  • 4 beef rouladen slices (thin top round)
  • 4 tsp German mustard
  • 4 slices bacon
  • 1 onion, finely diced
  • 4 dill pickle spears
  • 2 cups beef broth
  • 1 cup red wine

Instructions

    Lay beef slices flat. Spread mustard, top with bacon, onion, and a pickle spear. Roll up tightly and secure with toothpicks or kitchen twine.

    Sear rouladen in hot oil on all sides until browned.

    Add beef broth and red wine. Cover and braise at 160°C for 2 hours.

    Remove rouladen. Thicken gravy with a flour-butter roux if needed.

    Serve with Kartoffelknödel and Rotkohl.
