Handrolled Swabian potato noodles pan-fried until golden, served with caramelized sauerkraut and bacon.

Ingredients

  • 2 lb potatoes, boiled and riced
  • 1 cup flour
  • 1 egg
  • 1 lb sauerkraut
  • 4 oz bacon

Instructions

    Mix potato, flour, egg, salt into dough. Roll finger-length noodles.

    Boil until they float. Fry in butter until golden.

    Fry bacon. Add sauerkraut and sugar. Caramelize 10-15 minutes. Serve together.
