A succulent pork loin coated in a thick mustard crust, roasted until the outside caramelizes and the inside stays juicy. The pan drippings create a tangy, rich gravy that pairs perfectly with boiled potatoes and green beans.

Ingredients

  • 2.5 lb pork loin roast
  • 4 tbsp German whole-grain mustard
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 2 onions, quartered
  • salt, pepper, thyme

Instructions

    Mix both mustards with honey. Season pork with salt and pepper, then coat generously with the mustard mixture.

    Place pork on onions in a roasting pan. Pour broth and wine around (not over) the meat.

    Roast at 180°C for 1 hour 15 minutes until internal temp reaches 63°C. Rest 15 minutes.
