Ingredients
- 2.5 lb pork loin roast
- 4 tbsp German whole-grain mustard
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 cup chicken broth
- 1/2 cup white wine
- 2 onions, quartered
- salt, pepper, thyme
Instructions

Mix both mustards with honey. Season pork with salt and pepper, then coat generously with the mustard mixture.

Place pork on onions in a roasting pan. Pour broth and wine around (not over) the meat.

Roast at 180°C for 1 hour 15 minutes until internal temp reaches 63°C. Rest 15 minutes.

Deglaze pan juices on the stovetop for gravy. Slice pork and serve with gravy.
