White Asparagus with Hollandaise

Ingredients
- 2 lbs white asparagus
- 3 egg yolks
- 1 cup butter, melted
- 1 tbsp lemon juice
- 1 pinch sugar
- 1 lb new potatoes
- 8 slices cured ham
Instructions

Peel asparagus from just below the tip downward. Trim woody ends.

Boil asparagus with sugar and a pinch of salt for 12-15 minutes until just tender.

Make Hollandaise: whisk egg yolks over a double boiler, slowly drizzle in melted butter, add lemon juice.

Boil potatoes until tender. Serve asparagus with Hollandaise, potatoes, and ham.
