White Asparagus with Hollandaise

The spring dish of Germany — tender white asparagus served with classic Hollandaise sauce, boiled potatoes, and cured ham.

Ingredients

  • 2 lbs white asparagus
  • 3 egg yolks
  • 1 cup butter, melted
  • 1 tbsp lemon juice
  • 1 pinch sugar
  • 1 lb new potatoes
  • 8 slices cured ham

Instructions

    Peel asparagus from just below the tip downward. Trim woody ends.

    Boil asparagus with sugar and a pinch of salt for 12-15 minutes until just tender.

    Make Hollandaise: whisk egg yolks over a double boiler, slowly drizzle in melted butter, add lemon juice.

    Boil potatoes until tender. Serve asparagus with Hollandaise, potatoes, and ham.
