- 1/2 cup cold butter
- 1 lb white asparagus
- 4 oz Black Forest ham
- 3 eggs
- 1 cup cream
- 1 cup Gruyère, grated

Make pastry. Blind bake at 200°C for 12 minutes.

Blanch asparagus 3 minutes. Arrange in tart with ham.

Whisk eggs and cream, pour over. Top with cheese. Bake at 180°C for 30 minutes.
