Buttery pastry filled with white asparagus, Black Forest ham, and a savory egg-cream custard with Gruyère.

Ingredients

  • 1.5 cups flour
  • 1/2 cup cold butter
  • 1 lb white asparagus
  • 4 oz Black Forest ham
  • 3 eggs
  • 1 cup cream
  • 1 cup Gruyère, grated

Instructions

    Make pastry. Blind bake at 200°C for 12 minutes.

    Blanch asparagus 3 minutes. Arrange in tart with ham.

    Whisk eggs and cream, pour over. Top with cheese. Bake at 180°C for 30 minutes.
