Ingredients
- 500 g mascarpone
- 4 eggs, separated
- 100 g sugar
- 300 ml strong espresso, cooled
- 200 g ladyfingers
- 2 tbsp cocoa powder
Instructions

Beat yolks with sugar until pale. Fold in mascarpone.

Whip egg whites to stiff peaks, fold into mascarpone mixture.

Quickly dip ladyfingers in espresso, layer in dish. Top with cream. Repeat.

Refrigerate 6+ hours. Dust with cocoa before serving.
