Ingredients
- 1 lb firm tofu, crumbled
- 1 cup breadcrumbs
- 1 onion, grated
- 2 tbsp capers
- 2 cups vegetable broth
- 1 cup plant-based cream
- 1 tbsp lemon juice
- 1 tbsp mustard
Instructions

Mix tofu, breadcrumbs, onion, salt, and pepper. Form into balls.

Simmer balls in vegetable broth for 15 minutes.

Remove balls. Whisk cream, lemon juice, and mustard into the broth. Add capers.
