Flaky phyllo dough wrapped around spinach, feta, pine nuts, and roasted peppers. Elegant vegetarian main course.

Ingredients

  • 1 lb fresh spinach
  • 7 oz feta cheese
  • 1/4 cup pine nuts, toasted
  • 6 sheets phyllo dough

Instructions

    Wilt spinach, squeeze dry. Mix with feta, pine nuts, and nutmeg.

    Layer phyllo, brush each with oil. Spread filling and roll up.
