An Italian-style open-faced omelet loaded with seasonal vegetables and cheese, finished under the broiler.

Ingredients

  • 8 eggs
  • 100 g spinach
  • 1 zucchini, sliced
  • 100 g cherry tomatoes
  • 80 g goat cheese
  • 2 tbsp olive oil

Instructions

    Sauté zucchini and tomatoes in an oven-safe skillet with olive oil.

    Add spinach, wilt briefly. Spread vegetables evenly.

    Pour beaten eggs over vegetables. Cook on stovetop 5 min until edges set.

    Dot with goat cheese, broil 3-4 min until golden and puffed.
