Ingredients

  • 2 lb white asparagus
  • 3 egg yolks
  • 1 cup melted butter
  • 1 lb boiled potatoes
  • 8 slices cooked ham

Instructions

    Peel asparagus. Boil in salted water with sugar 12-15 minutes.

    Whisk egg yolks over double boiler, slowly drizzle in melted butter. Add lemon juice.
