Zimtsterne — Cinnamon Star Cookies

Ingredients

• 3 cups almond flour
• 1.5 cups powdered sugar
• 2 tbsp cinnamon
• 3 egg whites
• 1 tsp lemon juice

Instructions

   Beat egg whites until stiff peaks. Reserve 1/3 for glaze.

   Fold almond flour, powdered sugar, and cinnamon into remaining egg whites.

   Roll out between parchment to 1cm thickness. Cut with a star cookie cutter.

   Brush tops with reserved egg white glaze.

   Bake at 150°C for 12-14 minutes — they should stay pale on top with a slight crack.
