A pan-seared beef steak smothered in a mountain of crispy fried onions, served with a rich onion gravy and Spätzle. This Swabian classic is the everyday luxury of Stuttgart and Baden-Württemberg.

Ingredients

  • 4 beef steaks (rib-eye or sirloin)
  • 4 large onions, thinly sliced
  • 3 tbsp flour
  • 1 cup beef broth
  • 1/2 cup red wine
  • 3 tbsp butter
  • oil for frying, salt, pepper

Instructions

    Toss onion rings in flour. Fry in batches in hot oil until deeply golden and crispy. Drain and set aside.

    Season steaks with salt and pepper. Sear in a hot pan with butter, 3-4 minutes per side for medium-rare.

    Deglaze pan with red wine and broth. Simmer to reduce into a rich gravy.
