Quality ingredients are everything here. Seek out the ripest summer tomatoes you can find.
The feta should be placed in one large slab on top, not crumbled.
Ingredients
- 4 large ripe tomatoes, cut into chunks
- 1 large English cucumber, chunked
- 1/2 medium red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1 block (8 oz) feta cheese
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
Instructions

Combine tomatoes, cucumber, onion, and olives in a serving bowl.

Drizzle with olive oil and red wine vinegar. Season with salt and pepper.
