This vinegar-based coleslaw is lighter and more refreshing than traditional creamy versions. Shredded cabbage and carrots dressed in a tangy sweet-sour vinaigrette.

The beauty of vinegar coleslaw is that it actually gets better as it sits — no wilting or getting watery like mayo-based versions.

Perfect alongside pulled pork, fried chicken, or fish tacos.

Ingredients

  • 6 cups shredded green cabbage
  • 2 large carrots, shredded
  • 1/3 cup apple cider vinegar
  • 3 tbsp sugar
  • 3 tbsp vegetable oil
  • 1/2 tsp celery seed
  • 1/2 tsp salt

Instructions

  1. 1

Toss shredded cabbage and carrots in a large bowl.

  2. 2

Whisk vinegar, sugar, oil, celery seed, and salt until sugar dissolves.

  3. 3

Pour dressing over slaw and toss to coat.

  4. 4

Refrigerate at least 1 hour. Toss again before serving.
