
BBQ Pulled Chicken Sandwiches

Smoky, sweet, tangy BBQ pulled chicken piled high on toasted brioche buns with creamy coleslaw — this is summer eating at its best.
Poach chicken breasts in a mixture of BBQ sauce and broth for ultra-moist results, then shred and reduce the sauce.
Top with a vinegary coleslaw for crunch and acidity to cut through the rich BBQ sauce.
Ingredients
- 2 lbs boneless chicken breasts
- 1.5 cups BBQ sauce
- 1/2 cup chicken broth
- 6 whole brioche buns
- 2 cups coleslaw mix
- 3 tbsp apple cider vinegar
- 2 tbsp mayonnaise
- 1 tsp smoked paprika
Instructions

Season chicken with smoked paprika and salt. Place in a pot with BBQ sauce and broth.

Bring to a simmer. Cover and cook 20-25 minutes until chicken is 165°F.

Shred chicken with two forks. Reduce sauce until thick and sticky.
