
Classic Beef Stroganoff
Tender beef strips in a rich sour cream and mushroom sauce over egg noodles

Beef stroganoff is a Russian classic that's become a worldwide comfort food favorite. Tender strips of beef and earthy mushrooms in a deeply savory sauce enriched with sour cream.
Sear the beef over high heat in batches — crowding the pan steams the meat instead of browning it.
Add the sour cream off the heat to prevent curdling. Serve over buttered egg noodles.
Ingredients
- 1.5 lbs beef sirloin, sliced into strips
- 8 oz cremini mushrooms, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp flour
- 1 1/2 cups beef broth
- 3/4 cup sour cream
- 2 tbsp butter
- 1 lb egg noodles
- 1 tbsp Dijon mustard

Cook egg noodles according to package. Drain and toss with a knob of butter.

Sear beef strips in butter over high heat in batches. Remove.

Sauté mushrooms and onion until golden. Add garlic and flour, cook 1 minute.

Add beef broth. Simmer until thickened, about 5 minutes.

Return beef to the pan. Remove from heat and stir in sour cream and Dijon.

Serve over buttered egg noodles with fresh parsley.
