
Beef and Broccoli Stir-Fry
Tender beef and crisp broccoli in a savory ginger-soy sauce

This beef and broccoli rivals your favorite Chinese takeout — tender, velveted beef slices in a glossy sauce that coats crisp-tender broccoli florets.
Velveting the beef (marinating thin slices in soy sauce and cornstarch) is the Chinese restaurant secret for impossibly tender meat.
Serve over steamed jasmine rice.
Ingredients
- 1 lb flank steak, thinly sliced
- 4 cups broccoli florets
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp vegetable oil
- 1/4 cup beef broth
Instructions

Toss sliced beef with 1 tbsp soy sauce and cornstarch. Marinate 15 minutes.

Blanch broccoli in boiling water 2 minutes. Drain.

Sear beef in oil over very high heat 2 minutes. Remove.

Stir-fry garlic and ginger 30 seconds. Add remaining soy sauce, oyster sauce, and broth.

Return beef and broccoli. Toss until sauce thickens and coats everything. Finish with sesame oil.
