
Cheesy Beef Enchiladas
Saucy, cheesy beef enchiladas smothered in homemade red enchilada sauce

These cheesy beef enchiladas are pure comfort — seasoned ground beef rolled in soft corn tortillas, blanketed in a smoky-sweet red enchilada sauce, and buried under melted cheese.
The homemade sauce is worth the extra 10 minutes. Dried chiles, cumin, and garlic create a sauce with depth that canned versions can't match.
Bake until the sauce is bubbling and the cheese is golden and irresistible.
Ingredients
- 1.5 lbs ground beef
- 12 small corn tortillas
- 2 cups shredded Mexican cheese blend
- 2 cups red enchilada sauce
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
Instructions

Brown beef with onion, garlic, and cumin. Season with salt and pepper.

Spread 1/2 cup enchilada sauce on the bottom of a 9x13 baking dish.

Fill each tortilla with beef mixture and cheese. Roll and place seam-side down.
