
Classic Bruschetta al Pomodoro
Toasted garlic bread topped with marinated fresh tomatoes and basil

Bruschetta is the simplest Italian appetizer and one of the most satisfying — crispy, garlicky toast piled high with juicy, marinated fresh tomatoes and fragrant basil.
The bread must be grilled or toasted until deeply golden and rubbed with a raw garlic clove while still hot.
Use the ripest, juiciest tomatoes — in-season summer tomatoes make all the difference.
Ingredients
- 6 thick slices Italian or sourdough bread
- 4 large ripe tomatoes, diced
- 2 cloves garlic (1 for rubbing, 1 minced)
- 1/4 cup fresh basil, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
Instructions

Mix diced tomatoes with minced garlic, basil, olive oil, balsamic, and salt. Let marinate 15 minutes.

Grill or broil bread slices until golden on both sides.

Rub hot toast with the cut side of a garlic clove.

Spoon tomato mixture generously onto each toast.

Drizzle with extra olive oil. Serve immediately.
