
Homemade Egg Rolls
Crispy golden egg rolls filled with seasoned pork and vegetables

Homemade egg rolls are a revelation — shatteringly crispy shells hiding a savory filling of seasoned pork, cabbage, carrots, and ginger.
The filling should be cooked and cooled before wrapping — wet filling creates soggy egg rolls.
Seal the wrappers with a cornstarch-water slurry. Fry at 350°F for the crispiest results.
Ingredients
- 1 lb ground pork
- 3 cups shredded cabbage
- 1 large carrot, shredded
- 3 stalks green onions, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp fresh ginger, grated
- 12 sheets egg roll wrappers
- 1 tbsp cornstarch mixed with 2 tbsp water
- oil for frying

Cook pork until browned. Add cabbage, carrot, ginger, soy sauce, and sesame oil. Cook 3 minutes. Cool completely.

Place 2-3 tablespoons of filling on each wrapper. Fold bottom corner up, fold in sides, roll tightly.

Seal the edge with cornstarch slurry.

Fry in 350°F oil for 3-4 minutes, turning once, until golden and crispy.

Drain on paper towels. Serve with sweet chili sauce or Chinese hot mustard.
